Our Distillers’ Cut Gin is a limited edition, small batch creation, made for gin purists, by gin purists. Crafted from scratch at Colwith Farm, by distillers Steve Dustow & Jordan Gilbert, this expressive gin is a culmination of everything we've learnt about distillation since launching our incredible plough to bottle spirits journey in 2018.

Every drop of knowledge gathered during 20,000 hours of distilling is present in this specially designed bottle of gin. From selecting the perfect potato for the base spirit, cooking, fermenting and distilling in optimal conditions, sourcing the world’s finest botanicals and marrying an array of distilling techniques to produce a gin unlike any other.

Distillation techniques: Pot distilled gin with vapour infusion and partial maceration
Blending water source: Distillery aquifer

Botanicals - Serbian juniper berries, English coriander seeds, Spanish orange peel, Belgian angelica root, Brazilian pink peppercorns, Cornish rosemary, Cornish lemon verbena, North American sweet almonds.

Tasting notes - Freshly macerated piney juniper smacks the palate up front, complemented by rich and warming coriander spice. Subtle citrus sweetness follows, owed to fresh lemon verbena and orange peel. Fragrant pink pepper spice adds further complexity, all brought together harmoniously by sweet almond creaminess and bitter angelica root.

Bottle design - Our Distillers’ Cut Gin is housed in our Limited Edition, small batch bottle. Driven by a desire to nurture local talent, our label artwork features a botanical masterpiece, pencil drawn by local artist and fellow farmer Amy Trudgian and printed by a Cornish company.

Perfect Serves:

A Distillers’ G&T: Place two extra-large ice cubes in our very own Dartington Crystal Copa glass, pour over 50ml of gin and top with chilled Fevertree light tonic water. Garnish with a fresh slice of orange and rosemary sprig.

Jordan’s Gimlet: Fill a cocktail shaker with dry ice cubes straight from the freezer. Pour 60ml of gin, 15ml of fresh lime juice and 15ml of sugar syrup onto the ice. Shake and fine strain into a chilled martini glass, garnish with a lime twist.

Arguably our Rhubarb & Ginger Gin is the most flavoursome gin in the world.

We take our award winning Dry Gin and pitch in fresh rhubarb and ginger root. Then we wait …..

Only when our Head Distiller deems it ready, we rack off the fruit and spice then hand bottle this complex gin in individual batches.

Perfect served neat on ice or paired with ginger ale, garnished with a rhubarb stalk.

Our Cornish Sloe Gin is truly a labour of love, crafted by our wonderful local community.

In early September, the hedgerows started to bulge so we put out a call for local sloe berries. We were taken aback by your response - within one week, you hand-picked and delivered a whopping 170 kilograms to our distillery doors. Thank you.

Here’s what we did next …..

Leaning into tradition, we gently macerated 116 kilograms of your sloe berries into a single batch of our award winning Aval Dor Dry Gin at 55.5%.

Then we leant back and let time do its clever thing.

The result of this attentive crafting is a beautiful symphony of authentic sloe gin flavours.

We’re enjoying piney juniper and citrus notes up front, mingling with subtle hints of exotic spice and warming roots. The plummy richness of bulbous sloe berries arrives next, perfectly rounded out by our homemade English sugar syrup.

Perfect served neat over ice in front of a crackling fire or nipped from your hip flask, during a blustery countryside walk.

If our Spiced Gin is the heart of a compelling story, resting it in American oak bourbon barrels has added a new beginning, middle and end. Maturation in oak barrels adds sweet vanilla notes, depth and warmth.
