Our Distillers’ Cut Gin is a limited edition, small batch creation, made for gin purists, by gin purists. Crafted from scratch at Colwith Farm, by distillers Steve Dustow & Jordan Gilbert, this expressive gin is a culmination of everything we've learnt about distillation since launching our incredible plough to bottle spirits journey in 2018.

Every drop of knowledge gathered during 20,000 hours of distilling is present in this specially designed bottle of gin. From selecting the perfect potato for the base spirit, cooking, fermenting and distilling in optimal conditions, sourcing the world’s finest botanicals and marrying an array of distilling techniques to produce a gin unlike any other.

Potato variety for base spirit: Maris Piper Class One
Field: Lane Park in Lerryn
Distillation techniques: Pot distilled gin with vapour infusion and partial maceration
Blending water source: Distillery aquifer

Botanicals - Serbian juniper berries, English coriander seeds, Spanish orange peel, Belgian angelica root, Brazilian pink peppercorns, Cornish rosemary, Cornish lemon verbena, North American sweet almonds.

Tasting notes - Freshly macerated piney juniper smacks the palate up front, complemented by rich and warming coriander spice. Subtle citrus sweetness follows, owed to fresh lemon verbena and orange peel. Fragrant pink pepper spice adds further complexity, all brought together harmoniously by sweet almond creaminess and bitter angelica root.

Bottle design - Our Distillers’ Cut Gin is housed in our Limited Edition, small batch bottle. Driven by a desire to nurture local talent, our label artwork features a botanical masterpiece, pencil drawn by local artist and fellow farmer Amy Trudgian and printed by a Cornish company.

Perfect Serves:

A Distillers’ G&T: Place two extra-large ice cubes in our very own Dartington Crystal Copa glass, pour over 50ml of gin and top with chilled Fevertree light tonic water. Garnish with a fresh slice of orange and rosemary sprig.

Jordan’s Gimlet: Fill a cocktail shaker with dry ice cubes straight from the freezer. Pour 60ml of gin, 15ml of fresh lime juice and 15ml of sugar syrup onto the ice. Shake and fine strain into a chilled martini glass, garnish with a lime twist.
